Inside 2 Michelin Star Liath: Photographing Damien Grey’s Dish of the Month

A few weeks ago, I received a call from Chef Damien Grey at 2 Michelin Star Liath in Blackrock. He asked me to come in and photograph one of his dishes. I have been working with Damien and the Liath team for over three years now and every time it is a privilege. Damien has that rare eye for detail, not only in how he builds a plate but also in how he understands the camera. That makes the process collaborative in a way that is both inspiring and exciting.
That dish has since been selected by the Michelin Guide as Dish of the Month for September 2025. To make it even more special, my photograph was chosen not only to represent Damien’s work but also as the hero image for the entire article.
Here is what the Michelin inspectors had to say:
“Guests are all advised by Damien Grey, the restaurant’s chef-owner, to start eating this dessert with the fine sugar tuile infused with raspberry, to get the initial hit of fruity flavour. This was followed with the various chocolate elements: an intense chocolate biscuit topped with a light milk chocolate mousse; a crunchy, nutty biscuit dusted with cocoa powder; a quenelle of wonderfully rich chocolate ganache; and finally, to eat last, a sphere of crisp white chocolate with a sharp raspberry liquid filling. I loved how this dish took two core flavours and presented them with such variation and imagination.”

It is always a joy to work alongside Damien. His creativity and precision never fail to push me as a photographer. It is special to see Damien’s work recognised at the highest level and to know my image was part of that moment.
